BLACK CHICKPEA

Typical variety of Murgia Barese that is well suited to dry climates and calcareous soils and does not need watering. The chickpea black is tasty , rich in fiber ( three times the amount present in a chickpea common ) and iron .

 

It is advisable to keep the chickpeas to soak for 36-48 hours . These pulses are indicated as an accompaniment for fish dishes ; when eaten individually their flavor is enhanced by the combination with extra virgin olive oil from ' Monocultivar ' Coratina , typical of the city of Andria .

 

The product is grown without the use of chemical additives and after the collection is subjected to:

• mechanical sieving ;

• sanitation ;

• selection with optical sensor .

EXTRA VIRGIN OLIVE OIL

Extra virgin olive oil with low acidity , from olives of variety ' Cultivar ' Coratina , cultivated in Contrada Scalapollice , Andria ( BT ) according to the principles of organic farming and pressed at low temperature within two days of collection .

 

Main features of cultivation :

• olive dry ( no irrigation ) ;

• rate of natural production , with a year of charge and a discharge ;

• matured olive tree and collection with a level of veraison maximum of 70-80%;

• handpicking .

SHELLED ALMONDS, "FILIPPO CEO" AND "TUONO" VARIETY

Almond " Filippo CEO " : traditional varieties of Puglia . The fruits rounded, have a hard shell and , often , twice the number of seeds. It ' a variety with late flowering (useful to bees ) and good resistance to cold . Much appreciated for the content of essential oils . Almond " Thunder " : almond PREMICE or semi - PREMICE ; Traditional varieties of Puglia , the first crops date back to the early nineteenth century .
